Steps

  1. Preheat oven to 180°C (160°C for convection oven) and grease the pans with release spray.

  2. Prepare 250 g FunCakes Deluxe Soft Cake Mix as per package instructions. Pour batter into 20 cm pan and bake sponge for 30-35 minutes. After baking, remove from pan onto a cooling rack and let cool completely.

  3. Repeat this step with another 250 g of FunCakes Deluxe Soft Cake Mix, this time dividing the batter between 15 cm and 10 cm pans. Bake these sponges for 30-35 minutes and also cool them on a rack.

  4. Prepare 300 g FunCakes Buttercream Mix according to package instructions and flavor it with a flavoring paste of your choice. Horizontally cut each of the three cakes into two or three layers using a leveler. Fill the layers with buttercream then cover the outside of each cake with a thin layer. Smooth with a scraper; a thick layer is not necessary. Refrigerate the cakes for one hour.

  5. Knead the FunCakes covering paste until smooth, roll out thinly, and cover the cakes.

  6. Place the 20 cm cake on a red board and insert four support rods cut to size. Put some buttercream between the rods and place a cake board cut to size on top. Stack the 15 cm cake on the board and repeat the procedure with three rods for the 10 cm cake. Use some buttercream to fix the smallest cake on top.

  7. Melt FunCakes White Deco Melts as instructed on the package. Pour melted chocolate into a piping bag, cut a small opening, and create a pretty white drip on the edges of all cakes. Melt the green Deco Melts and pour into a swirl-shaped chocolate mold. Let set in the refrigerator for about 20 minutes, then carefully unmold. Decorate some chocolates as gifts by adding fondant ribbons and bows.

  8. Prepare 75 g FunCakes Enchanted Cream® mix according to package instructions. Place the cream into a piping bag fitted with No. 4B tip and pipe a decorative border on the edges of the cakes.

  9. Decorate the cake with confetti, gold sticks, red marzipan roses, gold stars, and crispy pearls. Add green chocolates or fondant gifts to complete the decoration.

  10. To make the mice, color a small piece of white fondant with FunCakes ivory gel food coloring in a dark shade. Use this fondant for tails, paws, inner ears, and noses. Model a mouse from a solid piece of white fondant and make small indentations for eyes using a ball tool. Insert black sugar pearls for eyes. Attach ears, tails, and other details with edible glue. Finish the mice with scarves and hats made from red, green, or black glitter fondant.

  11. Finally, make candy canes by rolling and twisting two strips of red and white glitter fondant. Shape a curve at the top and cut straight at the bottom. Attach the canes and mice onto the cake for the final touch. Your stunning layered cake is ready to wow!
