Steps

  1. Prepare 500 g FunCakes biscuit mix according to the package instructions. Wrap the cookie dough in plastic wrap and refrigerate for one hour to firm it up.

  2. Preheat oven to 180°C (thermostat 160°C with convection).

  3. Remove the dough from the refrigerator and knead firmly. Roll it out on a floured surface to about 2-3 mm thickness. Cut out stars and numbers with the cookie cutters and place them on a baking tray lined with baking paper. To make star cookies like in the photo, you will need a whole star and a star with a hole in the center. First cut out the star with the 9 cm cutter then cut the center out with the 3 cm cutter. Bake the cookies for about 10-12 minutes until golden yellow and let cool.

  4. Prepare 225 g FunCakes royal icing mix according to package instructions and color it green. Place the icing in a piping bag fitted with tip no. 5. Pour the Discomix into a bowl and brush a thin layer of icing gel on the number-shaped cookies. Dip the cookies into the Discomix until fully covered then set aside.

  5. For the star cookies, place a whole star, right side up, on the table and brush the center with a layer of icing gel. Pipe small royal icing clusters along the edge of the cookie then gently press the star with the hole on top. Coat the cut edges of the hole lightly with icing gel and fill it with a portion of Discomix. Shake slightly back and forth then return excess to the bowl.
