Alphabet Cookies

Prepare 500 g of FunCakes cookie mix according to the instructions on the package, wrap the dough in cling film and let it rest for one hour in the refrigerator.

Preheat the oven to 180 °C (fan 160 °C).

Quickly knead the chilled dough until smooth, then roll it out on a floured work surface to a thickness of about 2-3 mm. Cut out shapes and letters, then place them on a baking sheet lined with parchment paper. Bake the cookies for about 9-12 minutes until they are lightly golden and cooked through. Let them cool flat on the work surface.

Warm some apricot jam briefly in the microwave and strain it using the back of a spoon. This will create an apricot glaze to brush on the cookies.

Lightly brush the cookies with a thin layer of apricot glaze and decorate them with the Alphabet Medley.
