What surface should you apply velvet spray to?
Apply the spray to a well-frozen preparation, just unmolded, such as an entremets or mousse: the cold surface instantly crystallizes the sprayed cocoa butter into a fine matte coating that imitates velvet.
Should you wait before tasting a dessert treated with velvet spray?
Yes, we recommend letting the item thaw in the refrigerator for at least one hour after application, allowing the center of the preparation to return to its normal texture.
Can White be used as a base before applying another color?
Yes, a first white layer can even out the surface before applying a brighter shade on top, for a more even, luminous finish.
