Pavoni’s Absolute Lemon Yellow water-soluble powder food coloring, developed in collaboration with chef Emmanuele Forcone, creates a bright, even lemon-yellow shade. Packaged in a 50 g jar, it is suitable for macarons, glazes, sugar paste and water-based sugar decorations. It is not suitable for chocolate or fats.

Is this yellow suitable for mirror glaze without a white base?
It gives the best results on a neutral or slightly whitened base (modern food-grade white based on E170 and glycerol E422) for a bright, even shade.
Can this food coloring be used in chocolate or a fatty preparation?
No. This food coloring is water-soluble: it is formulated for water-based preparations (glazes, creams, sugar paste). For chocolate or cocoa butter, an oil-soluble food coloring is required.
How much should I use for a strong shade?
This food coloring is highly concentrated: start with a knife tip or a few tenths of a gram, then adjust gradually to achieve the desired intensity, without exceeding the regulatory dosage indicated on the label.
