What is the difference between the slices and granulated fruit crispies?
The slices are whole freeze-dried apple rings, composed of 98% fruit. Granulated fruit crispies (mango-passion fruit, pineapple, etc.) are made from concentrated purées or juices, with a size of 2 to 10 mm. The slices offer greater visual impact and a purer ingredient profile; the crispies are more uniform and suitable for coating or incorporating into a mixture.
Why is the product fragile and how should I handle it?
Freeze-drying removes almost all the moisture from the fruit, making the slices very light but also fragile. It is recommended to move them with fine tweezers or a spatula rather than with your fingers.
When should I place the slices on my creations?
Always at the very last minute, just before serving or delivery. When in contact with a damp surface, the slices quickly absorb moisture and lose their crispness and firmness.
