Frequently asked questions
Your questions, our advice
How do you use Absolu Cristal glaze?
Warm the glaze to 35-40 °C in a double boiler or microwave in 20-second bursts, stirring between each, until it reaches a fluid consistency. Ladle it over the pastry on a rack (entremets, tart) and let the excess drip off. The shine is instant. Store at room temperature after use.
Can you color Absolu Cristal glaze?
Yes, it's actually one of its most common uses. Add food coloring (powdered or oil-soluble for fat-based glazes) to the fluid glaze at 40 °C and mix well. You'll get a glossy colored glaze to use like a classic mirror glaze, but without the complicated preparation.
Neutral glaze vs. homemade mirror glaze?
Homemade mirror glaze requires condensed milk, sugar, glucose, gelatin, and white chocolate: a lengthy, technical preparation. Valrhona Absolu Cristal neutral glaze is ready to use: simply warm and apply. A major time-saver in production. The visual finish is similar (crystal-clear shine), but homemade glaze adds a little more body and firmness.
How much glaze for an entremets?
Standard: 200-300 g of glaze for an entremets 18 cm in diameter. The 5 kg bucket is enough to glaze around 15 to 25 entremets, depending on their size. Any excess that drips off during glazing can be collected from the rack, remelted, and reused.
