Patissland Expert’s Technical Advice
Mastering nozzle No. 125 depends on the angle.
-
For a rose: Use a flower nail. Hold the nozzle with the wide part down (against the nail) and the narrow part up. It is the narrow part that will give this delicate look to the edge of your petals.
-
For flounces: Place the wide part against the cake and make a steady back-and-forth motion while moving upward or around the base.
Pro Tip: For an even more elegant finish, do not hesitate to use two different cream tones in your piping bag. Nozzle 125 will create a beautiful colored edge effect on the petal border.
