Gel Color 25g - Mulberry - ProGel
Mulberry gel food coloring, concentrated 25g bottle
ProGel Mulberry evokes crushed wild blackberry, deep velvet. This concentrated gel food coloring in 25 g size is designed for professional pastry chefs and demanding cake design enthusiasts. Especially sought after for high-end autumn wedding cakes and ruby wedding and diamond anniversary layer cakes, it offers a stable and intense shade with just a few toothpick tips.
ProGel's signature advantage: it is a universal water and oil dye, working equally well on water-based bases (royal icing, water glazes, syrups, meringues, macarons) and fat-based bases (buttercream, ganache, tempered chocolate, pastry fondant, sugar paste). One tube for the entire pastry range, whereas Colour Mill dyes require 2 separate ranges (lipo + hydro). Concentrated 25 g size covers 30 to 50 preparations depending on desired intensity.

Instructions for use
- Sampling: dip the tip of a clean toothpick into the ProGel and take a small amount. The concentrated gel format is dosed by the tip, not by drops.
- Initial dosage: place 1 toothpick tip in 250 g of preparation for pastel shades, 2 to 3 tips for bright shades, 5 to 8 tips for dark and saturated shades.
- Incorporation: mix vigorously with a spatula or mixer for 60 seconds to evenly distribute the gel. The gel consistency facilitates lump-free integration.
- Rest and stabilization: cover in contact and let rest for 15 to 30 minutes. The shade develops and fully reveals itself during rest.
- Adjustment: if the shade is too pale, take 1 to 2 additional tips and remix. Always use a clean toothpick to preserve the gel in the tube.

Frequently Asked Questions
What is the difference between ProGel and Colour Mill?
ProGel is a general-purpose water and oil gel: it works on all preparations (royal icing, buttercream, chocolate, ganache, fondant, sugar paste). Colour Mill comes in 2 separate ranges: liposoluble (for fat-based) and hydrosoluble (for water-based). ProGel offers versatility in a single tube, Colour Mill offers optimal coloring by base type.
What dosage for 250 g of preparation?
For pastel shades: 1 toothpick tip. For bright shades: 2 to 3 tips. For dark shades: 5 to 8 tips. Always start with less and adjust gradually; it's easier to intensify than to lighten.
Does ProGel gel mix with melted chocolate?
Yes, ProGel is designed to also work with tempered chocolate, unlike classic water-based gel colorants that cause chocolate to crystallize. Add a tip of gel at the end of tempering, at 28-30°C, and gently mix with a spatula.
How many colored preparations per tube?
One ProGel 25g tube covers about 30 to 50 preparations of 250 g depending on the desired intensity. For boutique pastries in regular production, the 25g size is the most economical artisan format.
How to avoid contaminating the tube?
Always use a new toothpick for each sample, never re-dip a toothpick that has been in the preparation. This discipline preserves the tube's lifespan and the gel's purity.
