Should the cake be hot or cold before spraying the velvet spray?
Very cold, ideally straight from the freezer: the temperature contrast makes the sprayed chocolate set instantly and creates the desired velvety effect.
What spraying distance should be maintained?
About 20 to 30 cm is enough for a thin, even layer; if you spray too close, the spray will run instead of setting on the surface.
Can two velvet spray colors be mixed?
Yes, by spraying one color first and then a second in a gradient over part of the cake, provided you let it set between applications.
