This 90 g jar combines two sizes of sugar pearls with a metallic gold finish, 6 mm and 8 mm. No, the coating contains fish gelatin. Gelatin-free alternatives are available in the Azucren range of white pearls.
Will the gold finish hold on moist cream?
The metallic finish can withstand brief contact; on whipped cream or mousseline cream, add the pearls at the last moment to preserve their shine.
Which size should I choose between 6 and 8 mm?
Both are already mixed in the jar: sort them if needed, using 8 mm pearls as spaced focal points and 6 mm pearls for continuous lines and borders.
